    How am I just now learning about Jicama? It is a delicious alternative to potato and has only 20% of the carbs that a potato has. Plus, it has loads of Vitamin C, potassium, manganese, magnesium, iron, and folate. Tonight, I put it in my beef stew. I’ll let everyone know how it turns out!
